Peaches, those lush, juicy, sweet summer fruits, are at their prime right now and I am making sure to get my fill while the getting is good!

For the first week of peach season I simply indulge in the beauty of biting into a perfectly ripe peach, letting the flavor explode in my mouth and the juices run down my chin. Then I come up with other ways to enjoy the bounty.

I know, I know it's 100 degrees out in sunny South Florida. But, my belly needs nourishment. And you don't wanna see me when I'm Hang-Gry!!! This makes a Big Ass Batch plus it's ready when you are.

Beef Roast 5-7 lbs
Sweet Potatoes 2 medium cubed
Carrots 1 cup cubed
Parsnips 1 cup cubed
Onion 1 cup cubed
Chopped Tomatoes 1 cup all natural
Beef Broth 1 cup
Coconut Milk 1 cup full fat/organic
Green Onions 1/4 cup sliced more

Paleo Crepe (Sweet Omelette) 1 large (made with Protein Powder instead of Coconut Flour)
Nut Butter 1 tablespoon
Bacon 1 tablespoon cooked/chopped
Paleo Candied Pecans 1 tablespoon
Paleo Caramel Sauce 1 tablespoon

Make Paleo Crepe Sweet Omelette, than spread Nut Butter inside and fold in half. Add Bacon, Pecans, and Paleo Caramel on top and prepare more
